Would you like to cook?
Are you interested in taking part in the River City EggFest by being a cook? Register as an individual or a two-person cooking team, to be a part of this great event.
As an EggFest Chef, you can prepare anything you like to serve. We’ll have the lighting of the Eggs at 8 a.m. on Saturday and you may prepare proteins, sauces etc. ahead of time. EggChefs should be prepared to provide a minimum of 300-350 bite sized samples to our tasters.
Long Cooks: EggChef’s who want to cook briskets, pork shoulders or other long cooks that can’t be accomplished between the lighting of the Eggs and 11am, may choose to start their cooks on their Eggs at home, as long as they adhere to the following guidelines:
- Cooking items must be finished on a Big Green Egg at the River City EggFest.
- EggChef’s must follow FoodSafe guidelines and ensure that the protein temperature has not been between 41-135 degrees for more than four hours. The internal temperature must reach between 145 degrees whole or 155 degrees if injected. We’ll cover these guidelines at the Meet & Greet on Friday night November 5, at 6pm.
Remember, you are providing bite sized samples – you are not expected to provide a meal. More is fine and you are encouraged to show off your skills!
What to bring
If you are bringing your own Egg, then please load your Egg in on Friday afternoon. If you are using a Demo Egg, it will be on site Friday. All Demo Eggs are to be coordinated with our River City EggFest Committee.
Cooks are required to bring all ingredients required for your dishes. This includes all your own food, plus what you need to cook, such as:
- Tents
- Tablecloths
- Thermometer
- BBQ Tools
- Oven Mitts
- Smoking Wood
- Seasonings
- Nonstick Cooking Spray
- Paper Plates
- Foil
- Paper Towels
- Napkins
- Toothpicks
- Plastic Utensils
- Cleaning Supplies
- Food Coolers
- Knives
- Cutting Boards
- We will provide each cook a table and two chairs
Eggcessories
If you use a demo Egg, you will have a large or x-large Big Green Egg. You can bring your own Eggcessories. Eggcessories that will not be provided, but are available at a discount for EggChef’s through your local Ace Hardware, such as:
- V-Rack
- Vertical Roaster
- Drip Pan
- Grill Extender
- Pizza Stone
Have fun and make sure to interact with your guests and tasters. Personality and service are all part of a great tasting experience.
